To me it looks pretty ripe and near ready but I’m no pro. Is the yellow spots on your fan leaves spider mite bites or something else?

I'd say you are in the harvest window. They look like you COULD cut them now. Personally I would try to hold out for another 7-10 days to really let them finish up nicely.
