Not very many people(home hobbyists) have complete control over their drying environment to keep a steady 60/60 count.I certainly can't.
In MY environment,3-5 days hanging and 2 in paper bags.Spring and summer time 3 days hang 1 in the bag and then into jar with a hygrometer to get down to 62 rh.Some cultivars skip the bag and go right into the jar.
My dry environment 74-80 F 55-62 Rh day and night readings,plenty of airflow.Lol My buds have never seen 60F. Still dank dank dank. Only big fans are taken,bud/sugars leaves are left intact.I dry trim(I believe this helps keep some smell).I dislike wet trimming.
Op you'll need to learn and adjust to your dry environment or gain complete control of it.
You'll also need to find out what works for you in said environment.Wet trim,dry trim,hang whole plant/s,branches only or nugs separated from the branches.
Dry and cure technique is just as if not more important than ya grow game.There are a few things I would attribute to the hay smell but I'll leave it to the pros.
