The hay smell seems to come from over dried, be it fast or slow, but it is definitely stronger smell if over dried fast. To avoid this check the first and second days materiel on day 3 (day 2 if you are 80+ temps), put it into air tight storage in a cooler place if it feels crispy on out side. After 24 hour you can dump it back out if it feels wet. Better to put it in too soon than too late but you must check it the first 24 hour and don't be afraid to dump it back out for 12 hour or more depending. This dumping out part is important, you need to check on it after 12 hour minimum (maybe ever less if it's that hot) as you don't want it to over dry, you want it back into sealed as soon as you can.
The mistake to avoid is trying to get everything chopped down at once, you may well have to stop harvest and start sealing the earlier stuff before it's too dry. For you that might be after half of the total harvest, maybe after 1/3. What ever, figure that part out for yourself. You also need to get use to feeling it for dryness prior to sealing, instead of relying on readers.
If it does get on the dry side once sealed, don't air it as much. Do once every other/third day instead of once daily. Then stop when you are happy it feels ''dry enough''. It can feel sticky, but not squishy wet, it can be difficult with certain strains to know the two but you get use too it.
One very scientific test after 24hour seal is to squish a small bud between your thumb and finger, if it hangs on the underside of your finger when you release it's too wet. With sticky buds it may cling to finger for a second or so but it should still drop off if it's getting to a dry level. If it drops off it doesn't mean it's ''done'', still air out a few more times at-least, but you're now in the good zone. Regular squeezing also gives you a feel for the various drying stages, try it.
