A cheap and easy meal.

Pair of pre-marinated chicken thigh/leg
One potato sliced into eights...salt/pepper/spices and a touch of olive oil
Assorted veggies with a bit of olive oil and salt/pepper
And a beer for the chef

Place the chicken in oven at 375 F,
After about 25 minutes, put the potatoes in
10 minutes latter add the veggies...total cook time about 50 minutes

I tried Campfire Stew in the oven tonight. Turned out pretty decent.

Usually you make foil packets and put whatever you want in them and then put them straight on some good coals on a campfire. Flip with tongs and cook a little longer. I learned it at summer camp when I was a kid and everyone we've told about it starts doing it. Easy, Tasty, and fun for kids.

Mine's plain with just carrots, potatoes, ground beef, and seasoned with Lawry's. But onions, mushrooms, or whatever you want can be added.

Shrimp, veggies, and butter would probably be good too in a foil pouch on the fire.
Brought back memories from Boy Scouts....the foil pack in the coals trick was awesome after a day of hiking.

God, we got in so much trouble at Scouts. Everything from sneaking beer on campouts, to sneaking off and going for a midnight pizza. We finally were "asked to leave".

I must admit, I wasn't the biggest salmon fan when I was younger. Mostly preferring lighter flavored fish, it wasn't until learning about the benefits of fatty oils that I became more intrigued. I quickly came to the realization that food that is good for you, also makes you feel good, like a euphoric high. Now I cant get enough. I really enjoy BBQ eel when we get sushi too.

As we age our tastebuds decrease. I think that's part of why the salmon today tastes better than my youth. Although none of the wild caught or farm raised salmon I've had even comes close to competing with the salmon that @GreatwhiteNorth sent me from AK. That and the halibut, oh yum.

I made grilled rainbow trout last night. No pics of the finished product, half of it fell between the grill into the barbecue. Tasted better than it looked.
