tonight i'll be serving up some meatloaf with pinto beans and mashed potatoes. maybe a canna cookie or 2 for desert. yum, yum!!!

Gonna make some jalapeno bubba burgers in a little with potato bread of course.. mmmm

Potato bread is good but I personally lean toward onion rolls instead. I cook a mean chicken fried steak expesially if i have left over bacon grease. Nothing beats a chicken fried steak fried in bacon grease then use the drippings to make a pan style country gravy. It is a heart attack on a plate but amazing to boot.

That is the one thing i missed about working in fine dining. Super cheap meals. We always had the best ingredients and as long as we stayed out of the truffel box and the saffron it was fair game. I made some awesome dishes working there

A good fillet is as simple as this

1 fillet
Salt and white pepper

Server with a roquefort and dijon Demi Glace`

place the fillet on a garlic crustini to avoid making the steak soggy and enjoy the best tasting steak ever.

A true wellinton is a pain in the ass, not to mention liver pate` tastes like shit. When i make wellingtons I usually stuff the pastry with a mushroom duxcelles (pronounced deux-cell) instead.

roquefort and dijon demi glace eh!??! ill give that one a go for sure sounds delightfully bad for me.
