that's called the "toro." the fatty muscle that runs the length of the belly all the way to under the head. you really need a larger fish for the meat to marble correctly. you don't normally get the high quality "toro" on yellowfin cause they don't get big enough. if you see "toro" or "otoro" on a menu then it came from a bluefin or bigeye tuna.Damn..Now I'm hungry. I meant hamachi. You get that belly meat that places don't have.

these dudes are artists with a machete. i wouldn't mess with them. most places they don't even have lawnmowers. these guys cut grass with machetes. i'm one of the few people in my town that actually has a lawnmower. up until last year they cut the soccer field grass with machetes.Those bushes are trimmed with just a machete ??
