You can just use your favorite soda to calibrate if you have nothing else. They keep that shit pretty consistent so just google the manufacturers ph of the soda and then just dip your probe in the soda to calibrate. Dude at my hydro shop told me about it only done it a couple times with mountain...
Just part of the decarboxylation process, will be back to its pretty smell when it is done drying but i have personally noticed that the smells seem to change a lil bit while in the jar. I am of the opinion that the slower the dry the better the flavor in the end product i usually aim for 5-7 days
