They keep that shit pretty consistent so just google the manufacturers ph of the soda and then just dip your probe in the soda to calibrate. Just part of the decarboxylation process, will be back to its pretty smell when it is done drying but i have personally noticed that the smells seem to change a lil bit while in the jar. I am of the opinion that the slower the dry the better the flavor in the end product i usually aim for 5-7 days
