If we're talking about the actual stalk to which the buds are attached, I do NOT get a *snap* by the time the buds are overdried - the actual bud stem does snap off the main stalk though. Most people don't seem to specify this distinction.. If I hung for 2 weeks, the buds would turn to dust.

I hang dry from essentially a close rack in a tent fitted with a duct fan. Good airflow and the humidity in the room fluctuates between 45-55 with temp at around 65-75. I cut off all the medium fan leaves (not the sugar leaves) before hanging. My buds are crunchy within 5-7 days in these conditions
