Two weeks left, maybe three. As long as your environment's RH is 45% to 50% you do not need to worry about rot. I do not see a hygrometer in the pics. You should get a combo hygro & thermo for monitoring RH and temperature.

If you're getting crispiness after only a few days then your drying area is very very dry. Leave the fan leaves on so that when you hang your branches they will cover the buds and help them retain moisture longer than if they were exposed. Still, you will want to monitor the RH of your drying...
