Keep some leaves next time. It will recover but to me it's always good to give your plant a hair cut once it's older. When are you going to train your plant? Pulling them down and stuff

The stem will thicken up. Curious as to why you would trim off the leaves when currently you don't have many.

Those are harvest times for an outdoor crop. It doesn't matter when you start them because when your plants are outside they'll start to flower some time in August. It depends how big of a harvest you want I guess.
