I wouldn't add the foxfarm soil if you're making your own mix. Pro mix, the worm castings, and perlite are good. Then add your amendments. For base soil I'd add something more all around based. Dr earth all around mix is 4-4-4. Foxfarm has a starter mix that's 3-4-4 I think.

There's no problem with a third transplant. I start out in square pots, transplant to two gallon pots, and then to sevens. Boom

It's to just keep it simple. My opinion is in organic gardening is pretty easy but some get thrown off by the simplicity. There's no real need for cal mag since you're putting lime in your soil. No need to ph since your lime and soil will regulate it. Keep some extra worm castings/ compost...

Just make a trip out of it anyway. It's rare that people from the easy coast make such a trip so go for the experience. I'm sure there will be something tga there and if you're lucky you might see him there. Good luck
