Any reason a meter simply wouldn't work instead of a controller? Or is it just a QOL thing.

Honestly I'm really only good at building PCs. The most DIY I've done is making a plastic tub grow box with 120mm fans. I'm sure there's a guide out there for it, but all I've got is a screwdriver and scissors.
