BEEF JERKY!

Ok, went to Lowe's and I bought a Masterbuilt electric smoker! $89 on sale!

I have a 2lb flank steak from the local butcher that I've just sliced up into strips and pieces, some against the grain some with the grain. I have it marinating in the fridge right now in some garlic/pepper marinade
1/2 cup soy sauce
1/2 cup water
4 tbsp brown sugar
4 tsp ground black pepper
1 tsp sea salt
3/4 tsp garlic powder
3/4 tsp onion powder

This is my first time using a smoker, I followed the directions and seasoned it this afternoon. I'll be using mesquite chips for this batch of jerky.

So anyways, going to let the meat marinate overnight and get up early tomorrow and start smoking! Will continue this thread with everything I do tomorrow.

In the meantime tonight...

Still a little buzzed from last night lol

Jerky has been marinating for about 15 hours now

The smoker is loaded and going to run at 160° for 1.5 hours, then I'm going to throw in a handful of mesquite wood chips (soaked in water for 20 minutes just before putting in the smoker) and run at 200° for 1 hour then back down to 160° for 8-9 hours.

I hope this turns out to be a good batch of jerky

Well the jerky turned out only ok, it tastes good, just a little tough. I think I let it go for too long, I let it go 8 hours after I turned it back down from 200°, probably should've checked it around 7-7.5 hours and pulled it out of the smoker....oh well, lesson learned. I'll still eat most of the jerky and what I don't, I'll give to my dog as treats, nothing will be wasted.

Smokers never work well till they are broke in , that's my story at least
My trial and errors aren't on the internet LOL
Nice beginning that hanging shot looks yummy

Yeah, I know, that turned out pretty ugly lol I'm going to try and run another batch next weekend and use a different cut of meat, probably eye of round and have the butcher slice it perfect for me. I'm going to keep trying untilI I get it down, worst case scenario is my dog ends up with treats every weekend.

How long have I fought with this infernal machine! I clearly have trouble concentrating. And even if I'm interested in some result for the future, I can easily forget about it. It was the same with meat ... If you only knew how many excellent pieces of beef I spoiled, bringing them to the state of burnt rubber. That electric smoker is still in my garage, but I'm even afraid to approach it. So far, I'm eating a plant-based protein meal kit. Perhaps one day I will overcome my fear of using technique and stop feeling guilty before me for spoiled meat. But for now, I'll watch others do it, lol.
