Bridgelux V-series nominal vs max power

Hello,
I've been reading Bridgelux specs for the past two days and have a question about the nominal power and maximum power.
I'm on a budget for tomatoes growth only and I found would I believe would be a good fit for my setup.
BXRE-30G3000-D-83 , V15D - Gen 8 series. This one is very "cheap" at digikey.

According to the spec (page 7) I could crank this one up to 1000mA at 36V and get twice the nominal output out of it.
Would i be able to get the power as specified on this page?

What are the disadvantages of using twice than nominal power of this COB? Lifetime and efficiency? I do have active cooling so that will not be an issue.

Running your leds at max will shorten lifetime, make thermal management more challenging diminish output per watt, but increase the amount of light.
Nominal: it's just really a number, drive as hard or soft as you like.

Thanks @Rocket Soul for confirming my understanding. According to the spec CRI should stay the same regardless of power which is good.
Optimally one would aim to get larger COBs and run them "soft" but the price difference per COB seems to be much higher when compared at "nominal" levels as $/mA and $/lm. The overpowered smaller COBs even with lower lm/W have much better "value" than the larger COBs.
Of course heat and max power will be limitation but I believe it will work out for me as I don't need the max power for my tomatoes and have active cooling for the COBs.
