when you hear 1 gram per watt... does that mean if you have 5 plants and a 250 watt hps you could get 250 grams per plant?? or does it mean 250 grams in total from all 5 plnats?

That means 250 grams from the light, no matter how many plants you have there. There are a limited amount of lumens, or "energy", so that translates to a certain amount of bud - if you're really a good grower.
