Did I pinch the tops of my plants right?

I pinched off the top of my plants about 7 days ago is the growth looking normal?
And can I pinch off any new growth on any part of the plant and have more growth?
Example can I pinch off the new growth on the 2nd picture?

That'll do. I think preventing any damage to the nodes where the new shoots will grow from is the focus.I normally leave a stub of the original stem above the node just to stay away from the shoots. Everywhere you remove a stem, the branch will produce growth from the shoots.

you can be ruff with them they can handle it man plus its all a learning curve for you.

when you grow reg seeds and find a male, play, experment with it in terms of pinching the stalk etc you get a feel of how tuff the stem is and in turn u will know how much pressure they can take, u understand?
As a beginner grower this will give you a ideal without fucking up ur females so play (pinch, bend what ever stress you cause with the males will be no problem as they will get binned anyways if ur not breeding
