I personally wouldnt chop those if i walked up to them lovingly everyday after months of growing...nah, id walk up and say.."not today my dear...soon, but not today"

I had to chop early due to bugs and mildew near the plant. But three days after my plant looked like yours it looked like this

I wish I could have gotten it all the way. But I was scared I'd lose the whole harvest. Be patient.
