I found a seed on one of my plants today, looked at all the others and havent found anymore. Question is will plants produce seeds without a male plant present?

Hermie happens. Sometimes on a micro scale with cannabis. Tons of factors as to what would have led to this. Weak genetics, conditions going off, stress from methods used, etc.

The male flower aspect can be really hidden or buried inside the flower at times when this occurs.

So, yes, they can produce seeds without an actual male in the space.

Yes, females can release feminized pollen as a survival technique in little pods often called "bananas" if allowed to flower too long or if stressed. If there was an actual hermaphrodite in your garden I would think you would know if you are inspecting everything regularly.

Do you have pets? Do they go in the room? It's always possible it was cross contaminated from somewhere else outside the house. A single grain of pollen could have been on any piece of clothing.. It happens.
