Drying seeds picked from live plants,,

Hi , as per title , I had to collect/pick seeds in situ from an outside plot,,(not idea I know,) but how long do you think to dry out before packing and storing in the fridge for following years, not wanting them to dry too quickly also as they wont be drying inside buds as normal,

Just wanting to keep the seeds in best condition,,
