First time grower having curing issues, maybe hidden fungus? Advice needed.

I harvested my Raspberry Cough 3 weeks ago, and everything appeared (to my eye) to be fine. However, after multiple attempts to move to glass jars failed (because the buds were still not dry enough), I started to get suspicious. I smoked a little to test, and there is a strong unpleasant taste/smell that I can't quite place.

I don't know if I am tasting mold/fungus, or if I my conditions + strain needs a longer cure. I have read other people say that sometimes they need as much as 2-3 months to properly cure, while other times as little as 3 weeks.

A few things to note. It has been very humid recently where I live, so that is certainly a factor. But I can't get past the taste, which is more than just being harsh. It is

To me, the buds appear fine, and I don't see any of the obvious signs I have read of fungus. Am I being overly anxious? What do you guys think?

You probably didnt dry them well enough. You shouldnt need to burp your jars. They should be dry to the point that they can be smoked fine before curing.

I barely cure my stuff. 5 days maybe a week tops. And it tastes good as ever. Sure after a month the flavors are more pronounced. But its good bud. No hay/grass flavor.

Also could be a pheno problem. Some get good trich production and good growth but not too much flavor. Happens sometime.
 
Humid weather isn't the best for drying. I bought some $6-7 mini-hygrometers that fit in my jars to help take the guess work out. I'm not sure how accurate they are but they do show fluctuation in the moisture content of my bud. Tells me when I need to leave the jar open for an hour or two. Using that & going by feel has improved my curing efforts markedly. Not perfect yet though, I'm wondering if my end product is just a touch too dry.
 
I've been using the Boveda Packs-62%, and they've been working great. I've got 1/2gal mason jars filled, with 2 8g BP in each. After a week and a half everything is good, so now ill just let cure for months. No need for burbing. You must make sure your buds are dry enough before sealing away, that's why I checked them after a week or so. So far I see no troubles with these.
