Flushing coco

Im close to harvesting my first coco grow and was wondering how much water to properly flush 5 gallon pots?

Depends on your definition of flushing. Most would say you're gonna wanna just pour gallons and gallons and Gallons of CLEAN RO 0ppm water through the coco until you've got less than 100ppms coming out of your run off.

Thanks...I'm currently on day 60 from the flip and 4 of the flush I have been using a gallon a day per pot (2 plants) of ph'd tap water. Should I collect the runoff so its not drinking back in?

Yes you shouldn't ever let it drink the run off back up.
