Should you chop them......I wouldn’t yet.
Really they look more mature then many who post this question, so congrats. You are definitely near the end. The stigma are red and have began to shrink, and it looks like the bracts are swelling some. Really I think it would use another 10ish days though. It still looks like a lot of clear trichomes from what I can see in those pictures.
