I'm quite the growing noob but adventurous in the kitchen.
Today I took a few big handfuls of fan leaf trimmings and decided to eat them.
I started out by making an oil by shredding up the leafy bits into a cup of veggie oil.
Then I placed it on a gentle double boiler to steam heat the oil for about an hour.
After draining the oil into a separate container, I took the leaves out and minced them finely along with green olives, roasted garlic, parsley, oregano, Parmesan cheese, and balsamic glaze.
Then I put the mixture in a container and poured some of the cooked oil on top.
Just spread it on toast.
Enjoy!
