How much leafs should I take off
Based upon your reference picture, I would say all of them.

What are you talking about? Lollipopping? Defoliating? Measured pruning?

Typically Lollipoppers will say to take off fan leaves that are getting no light.
Then there are the defoliators who say at timeframe x and y remove almost all fan leaves
Then there are the naturalists who say never remove a leaf

But basically about a pound, and maybe check your ph, likely overwatering though.

Depends on the plant and stage of growth and your propensity towards mold/mildew.

Keeping leaves alive that arent getting light causes the plants to use more energy keeping it alive than it is gaining. REMOVE!

Leaves that are sitting on bud or other leaves. MOVE OR REMOVE

I remove leaves as needed to ensure I dont get mold and mildew and since leaves transpire below the leaf I remove them for the reasons listed above. I also remove to increase yields for reasons listed above
