How much room should I leave in curing jars?

Thats looks good. I like to open my jar a few times a day at first to let in fresh air. Then when its 100% dry i keep it sealed

Fill it to the brim!! The less air space the better..and burp BURP ,it's important as already said

I like filled as full as possible without smashing at all

I prefer to put fewer buds in each jar. If you go into jars a bit too soon and fill your jars you increase the chances for mold. There is so little air in the jars for moisture to evaporate into that you are more prone to mold problems than with fewer buds. In both cases you do need to remove the tops and air them a bit but you have more leeway with fewer buds.

Another reason I do not like to put more buds in each jar is the more you pack them in the more they press against the sides of the jars and the more they press against the sides of the jars the more trichomes that will break either by pressure or rubbing when put in, taken out or moved in the jar, as they should be occasionally, and less trichomes end up sticking to the inside of the jars leaving their inner goodness behind when removed.

Exactly how i feel. I'd rather leave it an inch low, than risk smashing it down, cause even a little compression can mess up the taste. That happened to a friend's OG kush, that was fantastic, except for some because it was smashed too tight. Still good herb, but not the phenomenal super smell the rest of it had.
