You can use that box fan technique on beef jerky too, I saw Alton Brown do it on TV :P You use as many of those AC filters you want strapped to the fan with bungee cords.

i saw food dehydrators at a surplus store in the city for like 20 bucks

Your plastic food dryer is commonly too hot to use for what you intend. The one I got for drying my tomatoes actually burnt the tomatoes - now, either mine was defective or it really is too hot. You don't need heat, all you need is moving air. Moving air is how the large preservations facilities work, shitake and porcinini are dried on sheet pans in racks before very large fans in tunnels, as they dry, the racks are moved step by step toward the exit of the tunnel until they are dry at the far side.
