How Will I Know When My Seeds are Done?

I hope I am asking this in the right forum.
I am new to growing and am in week 7 of flower, My Two plants are from bag seed so i have no idea what they are except one looks to be a Sativa and the other an Indica.
I pollinated them about 3 weeks after starting flower and some of the seed pods have broken open and some have not, i looked over both plants and saw a few dark seeds but when i shook the branch none fell out.
The best looking seeds are deep in the buds and i tried my best to get some pics of them to help, but my camera is not the best and it was very hard to get a good,clear shot.
Im fighting to keep both plants alive right now due to some nute lock out and a deficiency of some sort and it seems my shorter plant is dieing.
I have done every thing I can to keep them alive as long as I can but both plants are looking very rough, mainly the short Indica.
I dont expect much smoke from eather one of them, Im just worried about the seeds right now.
Please can any one help me figure out when the seeds will be done or if they are done now?

3 weeks from 12/12 i would say 4 to 5 weeks left
