cooked this cake last night,was worried it would taste of canna butter because the butter i made tasted like shit but this turned out great,this is my own recipe feel free to make changes to your taste
150gram canna butter
130gram muscovado suger
200gram golden syrup
80ml of dark rum
2 beaten eggs
teaspoon ground allspice
teaspoon of ground ginger
80 gram of preserved stem ginger finely chopped
one bread loaf tin greased
Add butter,suger and syrup to a saucepan and melt down,leave to cool a small bit then add eggs.
sift flour add allspice,salt and ginger to a blow make a well in the center.
then add the melted mix to the bowl then mix together adding the stem ginger.
Make sure to use a whisk so it becomes light and airy.
pour the mix in your cake tin and put in the oven for 70min at 140C
I covered mine with tin foil while it was cooking so no goodness could escape an took it off the last 20min
