What is the problem when a plant has leaves with raised margins, kind of like a V shape or canoe shape?

Agreed. As long as it isn't turning yellow or brown I wouldn't sweat it too much.. Could be a heat issue.

Definately heat stress... how close is your light to your plants and what kind of light are you using?

This could be caused by toxic salt buildup, lack of water, or heat stress.
