If you're in the states...Make sure they'll accept it. I dont think postal money orders will work.
Contact the seed supplier and make sure you get the right kind. They'll tell you what they need.
As far as safety. Its just like any other way....You take a risk...But more than likely they'll ship your seeds.
So yeah...Money Orders are reliable.
