Noob questions..please help.

First i have a question about trimming/drying/curing:
My plan so far has been that i chopped my plants and trimmed most of the big fan leaves as best i could off the stalks and then hung them to dry in a dark room on fish string. Its been day now and was looking for tips on when i should trim the rest of the smaller fan leaves popping out of the buds and then when should i put them in jars to cure. Tips are appreciated, thank you.
I next had a question on feeding outdoor plants. The PH of my water is a bit high and i am using forest ocean foxfarm soil. Was going to try and go organic nutes but might just be stuck with GH bloom gro and flower or whatever. When should i start feeding nutes and how often would you recommend. Also, is there something i can add to the top of the soil to naturally drop the PH in my water....or it may be easier to use PH down myself every time i feed. Thanks for your help everyone.

As for growing outdoors, don't know a lot about that, but I've heard a lot of people have a better time using Heavy Harvest by Advanced Nutrients.
