Well said and thanks for going a little more in depth on this. I remember reading a ton of different inputs on this over the past couple years from various sources on this forum and a lot of the guys I tried to mimic more or less said the same, from what i can remember. I have not ph'd my water once since building my own soil, but to each their own as long as it's working.
To the OP, my water is a higher ph, above 8 (only tested with drops so not too sure on the exact ph other than it's over 8 and I haven't run into any issues as of yet from it. I do recycle my soil, so maybe the high ph water source would have more of a long term effect on a no-till pot though. As long as you know you have a quality soil, more importantly the compost/ewc in said soil, I would guess you'd be alright without the ph up/down. no expert, just sharing my experience with organics.
My plants fed with straight tap water, high ph/chloramines and all that comes with city tap water.
