This is probably a dumb question but I was wondering if I super crop the branches coming off of the meristem will those branches act like main colas or just produce larger bud sites?

Cutting off (topping) or tying down (LST) the TOP of the plant will allow for multiple tops if done correctly. Search for Uncle Ben's topping method.

To an extent... they will heal back thicker n stockier with shorter node spacing... keep doing it to the same branch & you can almost close the gaps between nodes creating a tight cola.
Give yourself adequate veg time 2+mos-- & you'll be golden..
