Whattup everybody, im making cookies today with some butter im making out of trim & stem I have. I was gathering directions, watching videos, etc, it's not hard to do im just conufused about when its simmering because some places say stir & simmer for 3 hours then put it in the fridge after you strain it, but some sites say keep it simmering for 24 hours? that's not really possible in my situation but does it make a big difference??
