You need to train plants early on if you want to get light to all the buds. Defoliation is always better before flower than during imo

i take off fan leaves under these conditions:
1) the plants are in healthy, happy, vigorous state of growth
2) they are not the very top fan leaves
3) they are directly blocking light to a bud site below
i dont pluck anything i use a sharp clean pair of shears. If the bud site at the base of the fan leaf is underdeveloped leave some of the petiole behind for support.

I'm not saying defoliation is bad. But I would suggest that what ever a company does doesn't mean it is the best strategy for everyone, it's the best strategy for that company. For exemple, those who grow chile serrano or fruits in general tend to harvest early because the chile/ fruit looks good at that point, yet they won't be at it's maximum taste since the inside won't be mature enough. But some companies do this because their product has to travel and some fruits will go bad during this process if they are harvested when they are done. The same way cannabis companies do defoliation to avoid problems like humidity since they are growing hundreds of plants at the same time.
If you are a home grower you can let the chile get to it's maximum spiciness. I mean you can pick a thing or two from large scale companies, but always keep that in mind.

Thanks Homegrown. Humboldt Seeds Pineapple Skunk. Cold closet at night helping to bring out the colors, 63 at night 75 day.
@Gregzky I defol most big fans at week 3 and pick light blockers here and there then another light defol at week 6, I left a lot on this one late because of all the frost even on the leaf stems.

The freebie I grew last year made it into my top10 strains, so I bought a 3 pack to give it another try. I just chopped her yesterday. I'll let you know in a week or two.
