Post-Harvest Question on Trichomes

All, just checked a few samples from my OG Kush plants and although it seems pretty early to me, about 70% of the trichomes are showing cloudiness with a handful showing amber. We've had a crazy-hot and dry season (Tri-Valley area east of San Francisco) so maybe that pushed them to finish a little faster. I've read that after harvest the trichs will continue to color for a time. I realize there are lots of variables, but my question is - How much change should we expect after we cut? Is it significant as far as continuing to cloud up and go amber, or just a bit as everything shuts down? With what I just saw, I'm thinking I need to chop now or very soon, but a little unsure because there are plenty of pistils that still look fresh and vital and that is putting some doubt in my mind.

Thank you for any advice.
