How far off the top should I come down
It doesn't really matter where you top it. You could cut the very tip off, or cut lower down and make a clone out of the top. You can't really do it wrong. The main idea of topping is to stop the apical dominance from the main shoot and allow all the other shoots to grow more. Then low stress training comes in handy to spread them out for a more even canopy. Just remember they will double or more in height during flowering.

once shes toppped you will have 2 new shoots iv seen plants topped 5 times or more it doesnt have to be just the top of the plant top all over if ya want ,if your lacking the vertical space top and lst is the way to go, try and keep that canopy level bro as for the temp i find it rather high i like it between 72 and 79 and humidity 40-60 i find works well

dont defoliate yet , those fans leaves work as solar panels to fuel your baby, i try not to cut any if possible if its blocking a potential bud site try and tuck em away as the are valuable to the plants growth
