Ive been reading up on growing indoors and they keep using the term EC. Wat does it mean and how can i use it.

As far as I know EC has something to do with electric conductivity within the water. It seems like stuff for the more advanced grower to me.

EC has to do with electrical conductivity, it measures the TDS, or total dissolved solids, in your water measured in PPMs, or parts per million. As for what can be done with this information, I'm not altogether sure. If it's too high you should get some kind of filtration system so it's less, I guess. Hydroponics growers use a TDS meter to determine how much nutrients they have used or should use.
