Transplanting

So my seedlings are at day 7 in a red solo cup and the roots have started to peak out the drainage holes.
I was hoping to only transplant once, but I wont be able to get the pot size I need for a few more days, and I have about 3 gallon pots, so I was wondering is it risky to transplant now, and again in a few weeks to a larger pot?

Also, the roots that are peaking out have like white fibres on them that look similar to mold, but are all uniform and even. I read somewhere that some roots get this appearance, but I'm worried that its abnormal. Only some of the roots popping out have this, and others are smooth. 20181031_194040.jpg Can anyone shed some light on that for me please?
It's hard to take a picture of but I have 1 that might show what I'm talking about slightly.
The center hole is the one I'm referring to

Thanks!
Any opinions on those fibrous white stuff on the roots?
Or is it just the root itself?
Its just root hairs, not a problem, and as the roots dry out from air they will turn a tan color and thats fine too. Roots growing out the bottom of a pot is not a problem either. You will often see roots out the bottom of small pots before they are even ready to transplant
