Using drippers where my run off will collect in dishes

Starting my new grow, will it be ok to use drippers into my pots of coco and for the run off to collect in the dishes? Only problem is I won’t be able to get in there to empty the dishes. My pots will always be raised out the dishes, advise on what to use for that would be great as well

keep the roots outta the wet ....or else ...lol

maybe soil is a better option if you can't or won't manage?
