Water only soil. What do you use?

Coots Mix is a good one to start with.
Good compost/ewc
Spaghnum Peat
Aeration

Thats a good base. Just need amendments after that. You may can source all three bases locally cheaper than build a soil.
I have made a run with kindsoil and sohum which work great but are extremely expensive.

A well buffered soil shouldn't need ph'ing unless the source is quite hard or soft. I use tap water run through a 3 stage filter with catalytic carbon to remove chlorine and chloramine.

Just recently I came up on a gem of an interview with Clackamas and here is his current mix. I also included the way to feed this mix because it's unique in the fact that we're targeting enzymes in our feeds. Coots is also getting upset about his method not being used properly and people...
