Mehhhh talk of sales of items is a little frowned upon tbh. You are starting up a dispensary with a proper licence and asking for professional, legal advice, right? =P
Take the cost of ingredients, over the counter cost of the weed, and any energy consumption costs cooking, and you have the value A
However many cookies/whatever you get from a batch is the value B
How fucking awesome the cookies taste dictates value C (think of how much a great cookie tastes in starbucks and how expensive those little shits are)
Take A, divide it by B, add C, and you get X
Multiply X by your overheads and profit figure which should be a standard target figure for a business (such as 20%) and you have your price per cookie.
When selling them, it might be worth while advertising what each cookie equates to in terms of joints, so the cost of the cookie is justified in the minds of your customers. Just remember to advertise how fucking awesome your cookies are and the use of the Cookie Monster image is highly (heheh "highly") advisable.
