I will be curing 3 to 4 months before all gone. I have two choices . A wine cooler at < 62 ~64 degrees or room temp of 81 degrees here in the SW now in summer. Dont usually run central air below 80 at best with ouside temps over 110 ~ 115. Also would mold be more of an issue at 64 degrees? I understand mold likes cooler temps. I have not had an issue before in wine cooler.
