Whats happening , drying issues ?

Hey guys , so I've been drying my plants whole a little over 2 weeks now. Yesterday the moisture meter read around 15. Today 12 % . So I trimmed and Grove bagged the bunch . I put a hygrometer in the Grove bag . It's been a few hours now and moisture of hygrometer reads only 51-52% . Any clue what's going on ?
The buds seemed so brittle when trimming. But they have the whole time drying really . Drying in 60/60% the whole time

Here is another thing now really confusing me . So when I moisture check a cured dispensary bud with the meter it reads 15.8 % . So if this what it should read when I jar the bud after drying? Or is it still 12 % like everyone says
My bud which is hanging is reading 15% at the moment . When i jar it however , the batch reads 60% ..so is it done drying ? I'm so confused now

Jar overnight. Squeeze flower, if too moist leave the lid off if too dry then remember not to go so long next time. If you were 60/60 for two weeks moisture should even out and they will be just right.

If I bag them too early and they are too moist , is this a problem that can be fixed if caught early enough? Just place them out to dry some more ?

Yes that’s where burping comes in but if you can really maintain 60/60 I don’t usually have to burp after 2+ weeks. I used to quick dry for 4-7 days and burp for a week but since I found the sweet spot of 60/60 I leave them hang until I can get to them which is usually more like 3 weeks and their usually perfect and so much better term wise.

Also sometimes a really resinous flower doesn’t ever feel dry, like my head stash. But as long as it burns in a joint it’s good.
