Sounds good! I would sweat some onions and my garlic in the pot for about 5-10 mins on low heat before adding stock and the rest of the goodies.... you'll get a little more depth to the flavour!Beef soup with star anise
Ingredients
1 litre/4 cups chicken/vegitable stock
450g/1lb beef steak , cut into strips
3 garlic cloves crushed
finely chopped coriander/cilantro roots (off your bunch of fresh coriander)
2 cinnamon sticks
4 star anise
2 tbsp / 30 ml light soy sauce
2 tbsp / 30 ml fish sauce
5ml / 1 tsp sugar
115g / 4 oz / 1 1/3 cups bean sprouts
1 spring onion finely chopped
1 bunch fresh coriander / cilantro coarsly chopped
Pour stock into large heavy based pan / pot .
Add the beef , garlic , chopped coriander roots , cinnamon sticks , star anise , soy sauce , fish sauce , and sugar .
Bring to the boil , then reduce heat to low and simmer for 30 minutes .
skim any foam off that rises to the surface .
Divide bean sprouts amoung bowls , remove and discard cinnamon sticks and star anise from the soup .
Ladle the stew over bean sprouts , garnish with spring onion and chopped coriander and serve .
enjoy ......
I also added a can of straw mushrooms to my soup at stage 1.
And i also added fresh torn mint leaves at the end .

Thumps first language isnt english, he does a damn good job trying though. Ive tried to learn spanish like three times and i know maybe five words, if that.I don't understand what your sayin dude !!!
Apart from you like chicken !!
That is sensational aw , you you be proud !Tonight was a good meal. One of the best ive cooked up in a while. Port wine braised lambshank on crab mashed potatos, with pickled shallots, feta cheese, and basil from my indoor garden. WTF. The ratio of potato to crab was 2.5/1. Butter, cream (lots), garlic, kosher salt, pepper, crab and potatos. Oh god it was good and rich. The sauce is just the braising liquid reduced with a little added port. It had a half a habenero in it so it had just enough spice to keep it interesting and the pickled shallots were sharp enough to cut the richness perfectly. Salty feta and the smell of the fresh basil. Oh man i wish there were leftovers.
