Hey you learn something new everyday !

Good luck with that para , grilling in a storm dosn't sound to great at all!

mmmmmmm ribs , nothing better than a smoker , you can damn near smoke any type of meat and vegitable , also make sauces
in there to impart a smoky flavour . mmmmmmmmmmm smoke

I agree with you there beef .
Salt and pepper thats it , even though i have smoked a 4 point rib eye roast b4 and it was amazing , (i smoked it for 10hrs)
It would cut with a spoon it was that tender !

I salt steak after cooking.

Salt pulls moisture out, and stops the maillard reactions from happening to their fullest potential. ;)

Congrats on the new job beef !!!!!
Those dishes look great , well done .

Thanks man! I didn't actually make THOSE dishes, hehehe - but that's the food the restaurant produces!

I beg to differ ! i find if you salt the steak hevy with salt it creates a crust that locks in the juices !!!

I beg to differ . salt that meat first , it will give it a crust to lock in all those juices !!!!!

Dude ya cheated me !i thought you cooked them ...
I'm sure you will learn ..............

I want to make some meatballs this week for spaghetti and samiches.

I bought a meatball sub from the local Italian shop over the weekend ans was trying to figure out the ingredients.
It was late and I was hungry and ended up wolfing it down not giving much thought to the innards.

I was checking out some links and this one by Alton Brown looks good.

I saw spinach in other recipes too.
Pretty basic as compared to the fine dishes you guys make.

I'm open to other suggestions.
