I recently traded cuts and got a hold of the katsu cut from a experienced old school grower.
I had pre 98 bubba cut before. It was damn good. Lost it to an onset broad mites and pm.
This guy is telling me the katsu is a better cut. More complex than the typical coffee and cocoa in the pre 98.
He also said that it stretches more than the short and stout pre 98.
Do any riu farmers have experience with the katsu cut?
