I've heard that a useful technique is to get into the habit of asking yourself at regular intervals while you're awake, "Am I awake or am I dreaming?" The idea is that if the habit becomes ingrained enough when you're awake, you'll start do do it when you're asleep.
I know this practice became very popular as a result of the Castaneda books and other new agey writings. Some Buddhist monks use it to extend their meditation practice into their dreams. They sleep sitting up in boxes which allow them to maintain their meditation posture while asleep.
