I laughed - I'm sorry. A new grower and the problem is plants just too damn big and healthy. Best "problem" to have I guess!

So you're at day 38 now, and leaving "for a couple months" in 16 days, so you're leaving on day 54.

Your options are:
1. Leave them for a couple months after day 54. Who will take care of them? If no one, they'll be a waste for sure.
2. Harvest at day 54, trim, and hang them for a couple months.

Sounds like you only have one option to me. Blue Cheese is fairly short flower time, so it should be somewhat viable smoke by that time.

Can you change your light? For example, if growing under a 1000W HPS, change to a 600W HPS and reduce to 8 hours of light. Try making the plant think it's fall (late in the season - less light and shorter days, similar to outdoors) and speed up the finish.

Worth a shot IMHO. I don't have any scientific study to support what I'm saying, but a good time to experiment.

Blue Cheese is an indica with a flower time of 55 days. That time for people who have grown it. Check Leafly for a lot of info on strains. Next week lower your humidity as far as possible and let the lights off temps go as low as 50. Increase dark time then to 11 on / 13 off. It will finish before you have to go.
