They do look much better now just let them do their thing now. Give them at least another week before doing anything to them.

Simple I water the plant the day before so that it is moist when I transplant and not dry crumbling soil prep your final bucket with good soil and make a hole in the middle as deep as your solo cup, turn the solo cup over with your fingers between stem and palm over the mouth of cup, then just squeeze the cup while rotating, the plant will slide right out. Never had a plant stress on me doing it that way, but be as gentle as you can.
